As we look to close our 2022 we are also busy making plans for 2023. Which involves planning our "roadshow". The Ranch and Recreation team enjoys getting out and hitting the road for a variety of reasons. Our number one goal is always promoting our listings, as we try to maximize every opportunity to showcase our client's property.  We find value in attending these events as it allows us to expose our clients properties to a wide array of potential buyers and allows us to have one on one conversations with each of them.

However, there are numerous benefits for our clients to attend these events as well.  Trade shows provide a great opportunity for producers to connect with your industry peers and generate new business opportunities as well. They give you the chance to meet with existing clients, attract new customers or build relationships with suppliers and other businesses who share similar interests.

Working in agriculture or even just living in rural America we can easily slip into isolation being our norm. But getting out to trade shows and industry events is a great networking opportunity and allows you to discover the new trends and technology that are available. With winter months coming it is better time than ever to check out your local farm and ranch show, livestock stock show or industry meetings.

Tender elk meat, wild rice, potatoes, carrots, and kale make a hearty stew to warm you up on a cold winter’s night.

The star of the show is of course fresh elk meat but the supporting role goes to wild rice and is worth a mention as well. Wild rice is low in fat, high in minerals and amino acids, and gluten free. Even better? It tastes really good, with a rich, earthy, nutty flavor that is the perfect match for wild game soups and stews. We used elk for this one, but any fresh game would be a great substitute.


Hearty Elk and Wild Rice Stew


Ingredients

  • 1  1/2 to 2 pounds elk stew meat, cut into bite-sized pieces

  • Kosher salt and freshly ground pepper

  • 3 tablespoons olive oil

  • 1 medium white onion, chopped

  • 2 carrots (coarsely chopped)

  • 8 cups venison or beef stock

  • 1 pound new red potatoes, halved or quartered

  • 1/2 pound wild rice (1 1/4 cups)

  • 3 cups kale, roughly torn

  • 1 tablespoon fresh rosemary, finely diced

  • 1 teaspoon red pepper flakes


Directions

  1. Season the meat well with salt and pepper. Heat the olive oil in the bottom of a Dutch oven or heavy pot. Brown the meat in small batches, taking care not to overcrowd the pan.

  2. Once all the meat has been browned, remove it from the pot. Add the onions and carrots to the pot and cook for 7 to 10 minutes, or until the onions are soft. Return the meat to the pot.

  3. Add the stock to the pot and bring to a simmer for 1 hour. Then add the wild rice, potatoes, kale, diced rosemary, and red pepper flakes. Cover the pot and simmer for another 1.5 hours or until the meat and rice are both tender. Check for seasoning and add salt, if necessary.

Partnering with the Wyoming Game and Fish, and using their Licensing for Veterans Program – a program that allows anyone to donate a big game license to be reissued to a disabled veteran – Hunting with Heroes Wyoming matches veterans with a license, provides guide services, rifles and other gear, game processing and room and board if required.
